Pecorino is a term used to define Italian cheeses made  from 100%  sheep's milk.

Dry and salted by hand numerous times, to deliver a fabulous taste.

The aging time varies from 8 to 12 months, giving a dry, crumbly  texture with a strong  and sharp taste.
