Rare Roast Beef Picnic Sandwich
Ingredients:
1kg Topside
2 tbsp Vegetable oil
Salt / Ground black pepper
Method
Heat the oven to 220˚c.
Poor the oil into a roasting pan and season well with salt and black pepper. Roll the beef in the oil, ensuring that it is well covered.
Put the tray with the beef onto the middle shelf of the oven and allow to cook for 20mins.
Turn the oven down to 180˚c and allow to cook for a further 20 mins.
Remove the beef from the oven and allow to rest in a warm place for 20 mins more. The beef will continue to cook for a few minutes so don’t be tempted to leave it in the oven too long. If using a meat thermometer, the centre of the joint should reach 55˚/60˚ for rare, or 65˚/70˚ if you prefer it a little more cooked.
Sandwich bread is a matter of choice, as are mustards and horseradish. I love a thick Bloomer, but select your own favourite.
